Using instant yeast and levain. Got my hands on some French T65 flour. The taste is getting there. Still missing something though. Will be trying fresh yeast with levain next.
Maybe a little more salt too; 1.8% at the moment

    Does your recipe call for any sweetener like honey? I find that adding some extra honey gives it a little pizzazz.
