There is something about crafting and executing an omakase meal that I find therapeutic and rewarding. I try to curate an experience with very little rules and lots of sake & tequila. I did this for a small group of our close friends, no formal training.
That kamatoro, uni toast and yuzu panna cotta 😍 wow!

Looks great! You got skills. Out of curiosity, how did you go about procuring these items? Did you buy cuts from a fish stand, if so what do you plan on doing with the rest of all those cuts? Legit curious haha. Good on you though and you are invited over anytime lol. I’m only just now getting back into sushi

5. madai nigiri w/ ooba, sudachi, salt
6. kanpachi nigiri w/ negi oil
7. akami-zuke nigiri w/ garlic chip, kizami
8. saketoro nigiri w/ zest
9. aji nigiri w/ negi, shoga
10. hotate nigiri w/ avocado, spicy kewpie
11. kinmedai nigiri w/ black salt
12. hamatoro nigiri w/ yuzu kosho
13. snowcrab gunkan maki w/ garlic butter, negi
14. chutoro nigiri w/ kizami
15. ikura gunkan maki w/ zest
