Baking is already a test of patience, finesse, and grace under pressure. It’s a delicate process that has to be followed to a T. Add the task of frosting and decorating the resulting confections and you’ve got a headache in store for most mere mortals. But when you find a hack that makes your life in the kitchen insanely easier, you should grab onto it and never let it go. (Like that time we learned how to create a foil divider in a slow cooker to make two dishes at once—score!)
That’s why this new shortcut has us in awe. Buttercream can be a complete hassle to pull together, particularly if you’re whipping up an egg white-laden Swiss Meringue or Italian variety. For a truly fluffy, unforgettable buttercream though, you don’t have to bother with egg whites or candy thermometers, as The Kitchn recently reminded us. You just need a tub of Marshmallow Fluff. Yup, that same gooey spread you use for Fluffer Nutter sandwiches and s’mores poke cakes works remarkably well in frosting.
Just mix butter with powdered sugar and Fluff (and vanilla extract if you like) and in just five minutes, your marshmallow fluff buttercream will be ready to devour—er, we mean decorate all of your cupcakes.
