VinnyD's in Wicker Park. Such nice people, incredible sandwich. Got hot giardinera, peppers, mozzarella, and 'lightly' dipped.

    That looks incredible! You’ll hear a lot of mixed reviews for the addition of cheese, but I think it’s solid from time to time

  4. I’ve lived here most of my adult life & did not realize that the addition of cheese is a legit option by natives until this past year. Mind blown.

    I always assumed you got sweet, hot, or no peppers; dry, dipped, or wet – period. I thought this was sacred like no ketchup. Learn something new everyday.

  6. People are gonna roast you for the cheese but as an adult, eat things however the hell you want to eat it. Hope you enjoyed the beef. I’ll die on the hill it’s better than a Philly Cheesesteak.

    Nothing wrong with cheese on a beef sandwich. Is it the classic way to do it? No. But is it delicious? Absolutely. I prefer provolone when adding cheese to my Italian beef.

  10. I don’t think I have ever got a Italian beef with cheese but I would say the Portillo’s Beef & Cheddar croissant is amazing. If I were to add cheese to a beef, I would just have it wet and add either cheddar or cheese sauce to it. I don’t think mozzarella or provolone would add much to it.

    Mozz on Italian Beef is my favorite way to eat it. Good without too, but I’d ignore any purests that try to claim it’s a wrong way to eat it.

    First beef should be without cheese. This is like going to Philadelphia and getting a cheese steak without cheese.

    Hot and sweet, dipped. If they ask about cheese you laugh and they overload the beef and peppers and actually baptize the dang thing instead of dipping her.

    I get cheese on my beef every single time, but a true Chicago beef does not have it.

    I had my first beef with cheese last weekend when the restaurant made a mistake. Honestly. It seemed to turn it into something different than a beef. I ate it, it was fine, but I don’t see any reason to order it that way again. It felt a little like putting ketchup on a steak.

    There’s nothing wrong with cheese. I love it. But once you put it on, it’s not a Chicago beef anymore. It’s something between a Chicago beef and a Philly cheesesteak. If you get it fully dipped, you’ll find that you don’t need the cheese anymore. It’s not simply the beef. It’s more the juice that separates a decent beef from a great one.

    I’m a fan of Vinny Ds. Just sucks how expensive it is but they’re only open like 1/3rd of the year so it does make sense.

    And screw anyone who says cheese on a beef is blasphemy, cheese rocks. Stupid gatekeeping.

    I used to get cheese on my beef and white castles all the time but now I go no cheese because I feel like the real flavor is there more and not being drowned out by the cheese.

    I moved to Tennessee from Chicago area 5 years ago. They have no idea of what an Italian beef is here. Ugh. Chicago has some of the best food in the nation
