Very nice. This almost looks like the eggs are cooked separately and layered on top. Makes sense for karaage because it’s already cooked.
I would cook some onions, add soy sauce, sake and mirin, then toss in karaage just enough to season, you don’t want them to get mushy and not be karaage anymore. Layer that on top of rice. Then cook a very loose omelette of eggs in the same seasoning to drape over top.
Maybe that’s closer? I see some onions in the eggs though, so maybe they are just using a small pan to keep it all together.
