My attempt/version of Korean Spicy Pork! A pretty savory, spicy, and sweet dish. Inspiration from below link, and I slightly varied it by velveting the thicker pork slices first (Chinese style)
– Marinated/velveted sliced pork butt/shoulder in soy sauce, cooking wine, cornstarch, and a little baking soda. – Sliced onions and carrots into strips. Diced scallions for garnish and left white parts whole – Minced ginger and garlic – Prepare sauce gochujang, gochugaru, soy sauce, dark soy sauce, mirin, sugar – Cook pork for 6mins ish and remove when browned – Cook onions and carrots, throw in aromatics of minced ginger/garlic and white scallion. When veggies are softened until you like, throw the meat back and most of the sauce in to mix in low heat (Don’t throw all of the sauce in, in case it’s too spicy or salty) – When taste is getting close to what you like, put on high heat for a minute-ish while mixing to “caramelize?” No idea what it’s called but it sure damn smells good – Throw in scallions, a bit of sesame oil, and sesame seeds to finish off
