





After weeks of restoration, I finally cooked my first piece of meat, a 2.6 pound tri tip.
Great learning experience moderating temps with the upper and lower vents. It was a little gusty on Sunday so dome temps surfed between 245-255*.
I appreciate the wealth of knowledge here assisting with upgrades to my gaskets, bands, ceramics, and more!
