Made a pork shoulder this past Sunday on a 22’’ Weber Kettle using the snake method.
Cooked for about 10 hours at 250 degrees until internal temp was 205 and probe tender.
Wrapped it in tinfoil at 157 internal cause it stalled hard.
Used a coffee rub and only sauced when I wrapped it.
