this is a really flavorful and easy meal prep. 2 lbs of ground pork, 5tbsp rice that has been toasted in a pan and then ground up in a mortar pestle, 2 or 3 decent sized shallots, 7tbsp fish sauce, juice of 4 limes, chili flakes, 1 bunch chopped mint, 1 bunch chopped cilantro, 4 green onions sliced. brown the meat and add the shallots. let it cook for a few minutes and then add the ground up rice, fish sauce, lime juice, and chili flakes, and a splash of water. cook that and let it reduce a bit (wet but not watery). remove from heat and stir in the herbs. adjust the ratios of ingredients if you like, this is a flexible dish. served w rice, sliced cucumber, and lime

    I make this all the time but I tend to add a little bit of anchovie sauce and a dash of salt.
