Breakfast : chia pudding with prunes, cherries and strawberries 😍 Scrambled tofu and sourdough bread, with an oat latte!
It was so good, my favorite breakfast currently 🥹

Lunch : I had a sumaghiyyeh, it’s a Palestinian stew with chards, onion, chickpeas, beyond meat, sumac, tahini…

Served with flatbreads and a tomato salad!

Dinner : I made grilled tempeh with one pot creamy zucchini pasta 😍
In a pan, just cook 2 zucchinis (in thin slices) in olive oil. When it’s golden, add the uncooked pasta (I used orzo) and then add water or broth, little by little like a risotto. Cook for about 15 minutes and add a splash of soy cream, salt and pepper!

    Chia pudding with cherries and strawberries!! One of my favorites! I’ve been using raw cacao powder but want to try vanilla flavor too
