




Some of you may know me from /r/sousvide where I recently tried mayo presear on a steak. Many argued I should give it a try on grilled cheese. So here we are.
First off, I used whole grain bread, cheddar and provolone for the cheese, and softened irish butter vs Hellman's mayo because its what I had. As suggested to me I put the thinnest layer of mayo on and started the pan with melted butter in. Both were cooked for the same time and flipped the same amount in a cast iron pan at med low heat.
NOTES:
Browning seemed noticeably better and more even on mayo and mayo did end up slightly darker.
Flavor was heavy on the butter side for butter obviously, but the mayo had very little added flavor. I'm not sure if this is due to a discrepancy in amounts. (I just used a regular amount of butter)
SUMMARY:
Mayo cook was quicker and the flavor subdued. If you like to taste the bread more probably go with this one
Butter added that sweet buttery flavor you'd expect from a greasy cheesy treat so go here if you live in America or you like cholesterol. Or both
In my opinion butter still reigns supreme for flavor. Its a goddamned grilled cheese, not a cheese toastie or whatever. /s
Also no cheese pull, cause they're apparently overated :p
tl:dr Butter is better and cheese pull is life.

I agree with you about butter for grilled cheese. There is something about the browned butter flavor it adds to the grilled cheese that mayo can’t replicate. Also I love a good cheese pull.
