
Coconut Chickpea Curry and Rice
Add olive oil to pot, sauté minced onion, garlic, and ginger
Add masala or curry seasoning
Blend three tomatoes or use canned tomatoes and add to pot
Bring to simmer and add a can of coconut milk
Add 3 cans of drained chickpeas.
Add chopped cilantro
Use red onion as garnish
Serve with rice
