For dinner we had tacos with pico de gallo and a cut up avocado. The pico de gallo was the star of this meal IMHO but the everything paired well IMHO.
Pico de Gallo recipe
Ingredients
* Tomatoes – whatever is on hand and enough to get the ratio seen in the pic
* Onion – used half a large sweet onion, diced per pic
* 2 Jalapeño peppers – diced with seeds and veins removed (spoon works great here)
* Fresh cilantro – finely cut
* 1 Lime – juice and zest
* Salt to your preference
* Black pepper (optional), but if you want heat then I’d consider using the jalapeño seeds
Instructions
* A few hours before dinner mix all ingredients ahead of time
* I like to have the flavors blend plus I like the liquid buildup as it rests – great to spoon that liquid into your tacos IMHO
Tacos
Ingredients
* 1 lb of ground beef
* taco seasoning – about 1 oz – don’t have a recipe handy but I use a mixture of chili powder, paprika, salt, garlic powder, onion powder, dried oregano and some corn starch. Ratio is probably 2-2-1-.5-.5-1-1. Mix a lot ahead of time and measure out accordingly.
* pico de gallo
* avocado, diced (lol, finer than I did) – optional
* Tortillas – Didn’t make homemade but you can or whatever brand you like
* Water – just a small glass to use to make your sauce
Instructions
* pico should be made in advance so this must be done first
* pre measure your seasoning and have your water ready
* have your tortillas ready to go
* in a 12” skillet, brown the meat. If your ground beef is higher fat content then consider draining then return meat to pan
* add seasoning and mix completely with meat to bloom your spices
* add water until you have a nice sauce – don’t add too much to make soup!
* toast your tortillas in a 10” skillet – I just use Pam for the oil
* if using avocado, peel and dice to use immediately
Assemble your tacos and eat
Use other ingredients if you want like shredded cheese and sour cream
