Oven-Baked Psaraki with Rice + Zucchini 🐟🍅🇬🇷

This is hands down the easiest family dinner I’ve ever made, and wow, is it comforting. Fluffy rice, in-season zucchini + tomatoes, Swai fillets (AKA Pangasius) from Vinh Hoan massaged with mustard (!!), and finished with a ladolemono drizzle that pulls it all together like mama used to make. 😍
