


Andrea updates this classic salad with seared smashed potatoes, instead of the usual boiled ones, which adds both warmth and crispiness. The tomatoes are seasoned with salt and sugar, and green beans boiled in the same water that the potatoes are before they are smashed and seared. Capers and anchovies add depth to the shallot vinaigrette. A lovely, diverse, and streamlined salad. Go for the nicer canned tuna here. I used Ortiz.

Wow! Beautiful and looks so delicious. I guess I’ve always eaten my Niçoise salad like an uncultured baboon since I mix all the ingredients together.
