  1. Looks good. I did do similar a few years back and whole the end product was lovely, it was such an effort and amount of time with the oven on to make it I doubt I’ll ever bother again, but it was a fun experiment. 
    The feta idea is a cool one, I’m gonna try that

    i tried this once and it was way too sweet. but I made smoked salmon from it.

    I keep hearing about watermelon used in savory dishes, and I just don’t know how it would work. Did it still taste sweet?

    My girlfriend took me to Harvest Beat (a vegan fine dining restaurant in Seattle) a couple of times and they served a watermelon ‘tartare’ that was crazy delicious!!! This and a lobster mushroom bisque I had there are two of the best vegan dishes I’ve ever had, I think people who are disgusted by this should entertain giving this a shot some time!! Having tried something similar I think this looks delicious!!

    That watermelon would have been better as a salad. Add your feta, some mint, tomatoes, anything else you enjoy.

    We once made a Jerk Watermelon “Ham”. Half a watermelon skinned, in an aluminum pan, covered in jerk sauce, covered and grilled. Sliced it like a ham. It was so good!! Just a hint of sweetness but it mostly soaked up the spices and goodness.
