So my question is do you just leave them be until they all ripen or do you pick em as they mature or did they all turn color around the same time.

I had a reaper a few years ago that produced like that one. I froze them whole after washing. Still have a few bags and use them regularly. I pull them out and cut while still frozen before adding to the dish I am making.
