Biscotti, an Italian staple, is easy to make and last a long time at room temperature. There a many variations of biscotti recipes with nuts and dried fruits. I am sharing the basic plain biscotti recipe here.
Ingredients:
1 and 1/2 sticks of butter ( 3/4 cups or 150 grams)
4 eggs
2 tablespoons baking powder
1/4 teaspoon salt
1 tablespoon orange rind
1 teaspoon vanilla extract
4 cups all purpose flour
Instruction:
Preheat oven to 385 degrees Fahrenheit. Line a baking tray with parchment paper. Cream the butter with an electric mixer. Add sugar, eggs and vanilla and mix. Add the baking powder, salt and as much flour as possible and mix with the mixer. Add the rest of the flour with a wooden spatula. Shape two loaves by hand on the baking tray. Bake for 25 minutes. Cool completely, then slice. Arrange the slices back on the baking tray and bake for 15 minutes on a 325 degree oven. Turn and bake for another 10 minutes. Cool and enjoy.
