🍰 Malva Pudding Recipe
For the Pudding:
• 225g Muscovado sugar
• 3 eggs
• 28g apricot jam
• 225g cake flour
• 1½ tsp bicarbonate of soda
• ½ tsp salt
• 115g melted butter
• 125 ml warm milk
• ½ tsp white vinegar

For the Malva Sauce:
• 200 ml fresh cream
• 125 ml milk
• 65g brown sugar
• 120g unsalted butter
• ½ tbsp caramel essence
1. Make the Batter:
• In a large bowl or mixer, beat the muscovado sugar and eggs (add eggs one at a time) until light and fluffy.
• Add the apricot jam and mix well.
• In a separate bowl, sift together flour, bicarbonate of soda, and salt.
• Gradually fold the dry ingredients into the wet mixture to avoid lumps.
• Add melted butter, warm milk, and vinegar, and gently combine (don’t overmix).
2. Bake the Pudding:
• Pour the batter into a deep, greased baking tray.
• Bake at 160°C for 55 minutes or until a toothpick inserted comes out clean.
3. Prepare the Sauce:
• In a saucepan, bring cream, milk, brown sugar, butter, and caramel essence to a boil. Stir gently until smooth.
4. Soak the Pudding:
• Once baked, remove the pudding from the oven and place on a chopping board.
• Poke holes all over the pudding using a skewer or large toothpick.
• Slowly pour the hot sauce over the pudding so it soaks in fully.
5. Serve:
• Serve warm with custard, whipped cream, or both. Perfect for dessert or a sweet afternoon treat!
