🥗 Here's my easy way to hit my “half a cup of beans a day” goal:
A quick cannellini bean salad + a slice of whole wheat bread (or half a pita, like today).

To make it:

Drain and rinse 1 can of cannellini beans

Chop about ½ cup each of yellow bell pepper, cucumber, and grape tomatoes

Add a few olives and some finely chopped red onion

Toss everything in a quick dressing:
 • 1 tsp Dijon mustard
 • 2 tbsp red wine vinegar
 • 4 tbsp olive oil
 • Salt and pepper to taste

Stir in a handful of any fresh herb you have (today was mint).

Let it sit for a few minutes so the flavors come together. Simple, satisfying, and full of fiber.
