
Hello! I just came back from Korea and had a delicious food called Semi-dried Squid (반건조 오징어 구이) paired with beer.
I want to make it at home, so I was wondering if I need to buy fresh squid, semi-dried squid, or dried squid to make this dish.
Do I use fresh squid, and cooking it is what dries it? Or do I rehydrate dried squid? Or do I need to buy a type of squid that has been semi-dried already?
I was having trouble finding the answer online, so I appreciate your help!

Squid is air-dried until they are either semi-dry or fully dry. They can be used to make banchan or anju, as in this case, by roasting over a flame.
You can of course air-dry squid yourself, but it’s a lot easier for most people to buy it in that form.
Please don’t eat this. The price of squid is on hyperinflation in Korea 😄
