First time with chuck steak. Cut it up into two pieces and salt brined for 4 hours. Seared in the cast iron with some butter at the end. The sear could have been better but I was satisfied with the results nonetheless!

    Looks great! I do have to suggest cutting the other direction against the grain. 10/10 definitely would have an otherworldly experience with it

    So in your first photo, is the top section the tail end of the round and the bottom section the Denver/boneless short rib? and what section resulted in the better steak?
