These juicy sausage, pepper & onion sammies basically cook themselves in fire-roasted tomatoes, balsamic, and garlic until they’re super tender and flavorful. And because I’m me, cheese girl, I topped them with creamy burrata because duhh!

Recipe:

INGREDIENTS
-FOR THE Sausage, Onions & Peppers-
2 sweet onions, thinly sliced
1 19 oz package italian sausage (mild or hot)
3 bell peppers, thinly sliced
1 14.5oz can fire roasted tomatoes
1 28oz can peeled tomatoes with basil, hand crushed
8 garlic cloves, ends removed
1/2 tsp garlic powder
1 tsp italian seasoning
1 tsp kosher salt?
1/4 cup balsamic vinegar

-FOR SERVING-
Ciabatta
Olive Oil
Garlic Salt
Burrata
Basil

INSTRUCTIONS
Add all the ingredients for the sausage onions and peppers to the @crockpot and stir.
Place the lid on the @crockpot and set it on high for 5 hours or until the sausage is cooked through and the peppers and onions are tender.
Remove the lid and let simmer and reduce for another 1.5 hours.
Taste and season with more kosher salt and pepper if necessary.
When serving as sandwiches, drizzle split open ciabattas with olive oil and a few dashes of garlic salt and broil until crispy.
Split a sausage and lay it on to the bottom bun, then top with the peppers and onions. Add a chunk of the burrata and a sprinkle of basil to the top before serving.
