    • 175 g (6.34 oz) of egg yolks
    • 4 tsp beetroot powder
    • 2 tsp salt

    Instructions:

    1. Combine the beetroot powder, egg yolks, and salt.
    2. Add the mixture to the flour and knead until you have a smooth, firm dough, about 8–10 minutes.
    3. Wrap the dough in plastic wrap and let it rest for 30 minutes.
    4. Roll the pasta out into a 2 mm (0.08 in) sheet.
    5. Lay the sheet over your chitarra and press with a rolling pin to cut the spaghetti into squares.
    6. Dust with semolina, then cook in boiling salted water for 2–3 minutes.
