I realized last week I had 2 frozen containers of salsa I made from last year’s tomato and pepper harvest. Yesterday I bought a 9 lb bone-in pork shoulder and put it in the slow cooker with the two frozen salsa blocks and some diced Serrano from this year’s plants. Cooked it about 12 hours on low, then shredded and put it back in the broth for a couple more hours. This will be quick dinners for my partner and I over the next few months. This makes amazing tacos.

You can do it with just a couple jars of store bought salsa as well. Super simple to make and the pork tastes fantastic!
