🥘 On the menu at my house: traditional French ratatouille. This dish always takes me back to summers in my mother’s kitchen… The scent of garlic, herbs, and simmering vegetables filling the air. Simple ingredients, unforgettable flavor.
I sauté the vegetables first in olive oil: onions, garlic, eggplant, zucchini, bell peppers. Then slow-cook them with tomatoes and a bouquet of herbs. It’s a labor of love, but oh so worth it, and even more flavorful the next day.
Served it alongside toasted couscous and a chicken leg (not pictured).
