Overnight Brisket, 22.5 pre-trimmed weight from Costco, ~19lb trimmed. Used double indirect method, fat side up. 250 degree grate temp, no looking, no wrap. Started at 7PM last night, finished 10am this morning and went into 170 degree oven where it will stay for a few hours before being transferred to cooler. Final temp was about 200 degrees and it was probe tender and wiggled like jello.

    I did double indirect for the first time to test last week with some chicken quarters… the pizza stone I bought to test cracked in 3, hope no one buys one in hopes of actually cook a pizza on one
