Personally I love both, but I’ve attached a breakdown here + a recipe for babybacks with a July 4th themed sauce in the comments below
I posted no wrap the other day, here I’m showing more traditionally cooked varieties I’ve made recently less

Here’s the info and recipe for those interested: https://theblackdogbbq.com/st-louis-vs-baby-back-ribs-which-should-you-cook/
I’ve gone back and forth, right now I’m on a baby back kick. I finally made the switch to no wrap and I think that’s how I’m going to stick with that going forward
St Louis
St Louis 100%
I don’t think I trim spare ribs correctly cause they always have this grisl stuff in them after I smoke them.
San Luis
St. Louis
why not both?
Beef
St. Louis every time. I don’t know why people say baby back has more meat. St. Louis is both more tender and more meaty (if not overly trimmed).
St. Louis no question.
Either or. Probably give the edge to the St Louis style. Pretty much boils down what’s on sale. Costco had St Louis style last weekend. Package of three Swift ribs at $3.49 per pound. So that is what I got for today
