I’m staggered at the money spent just on meat, let alone fuel, materials, etc. I don’t think I’d ever be able to drop over a $1000 on something *before* I got good at it. Jesus bro. Glad it finally worked out, but damn.

What did you change in your approaches? I still find my brisket can be well rendered but a little dry. I think it’s because of the lower fat content in Ireland so I do a lot more picanha sadly.
