Newest obsession for my lunch! Thought I'd share it as it's very easy and quick and I can't believe I haven't thought of doing this before now.
2 Eggs, 2 egg whites, 2 tbs greek yogurt, spices. I also like to sprinkle a little cheese (maybe cottage cheese or nutritional yeast could work as well?) over the top. Whisk together, pop it on the airfryer for 8 min, and lunch is served. During the 8 minutes I usually also cut up some green stuff!
Spinach, mushrooms and onions also mix well with this. If I want or need some carbs I'll add potatoes or serve it in a potato wrap / tortilla
