


Erin develops a wonderful way to cook and serve maftoul or moghrabieh in this simple salad. As an aside, maftoul is a whole wheat product that is similar to Israeli or pearl couscous, but as many things labeled Israeli, it originated in the Middle East, and well, the Israelis stole it and called it their own.
She toasts the maftoul in oil (I used EVOO) and then cooks it in a precise amount of water. Then cools it on a baking sheet. She developed. A variety of salads, but this one has spinach, basil, tomatoes, olives, and ricotta salata (I used feta). A lovely dish!

Israelis stole it? C’mon man, give it a rest. Much of the food from the Middle East is shared between multiple cultures—Greece, Türkiye, Lebanon, Armenia, Persia, Syria, etc. same delicious foods, different regional names.
If there is one thing that can unite peoples of differing languages and religions, it is delicious food.
