So Xnipek varies from region to region. My favorite is simply green habenero, salt and lime. But I can’t find green habs and didn’t grow any this year.
So I made a different version.
Today’s salsa.
5 orange habenero
1/4 red onion
3 Roma (deseeded)
1/4 cup cilantro (packed)
3 limes
Splash of OJ
1tsp white pepper
Salt and msg to taste
Cut everything into “pico” sized. Take 3/4 of it and add to a bullet blender and blitz 3-4 times. Add back, combine. Let sit for at least 2 hours.
Eat all in one sitting.

What a coincidence! This is the final step on every salsa i make. Also, on every salsa other people make. 😁
