Last week I asked you to vote for me for since I was going to the finals of a cooking competition. Thanks to everyone who voted for me, much appreciated! I didn't win the voting, but I did win the competition!
On the day of the competition we went to a local farmer where we had to harvest our own vegetables that we were going to use for our inspiration dish. There were a few extra ingredients that we all could use and the main focus was sustainability.
What I harvested: courgette, bell pepper, fennel, carrot, leek, spring onion, red beet, nasturtium.
What I made: Courgette package, filled with fresh tofu and a duxelles of fennel, onion and courgette. A courgette creme. Mixed mushrooms, glazed with a reduction of soy whey, red beet and tomasu (dutch soy sauce). In the middle a vegetable reduction where I also used all the trimmings. On the side I had a bell pepper & spelt (local wheat) 'risotto' topped with a sauce made from burned spring onion and nasturtium.
We also had to make our signature dish which was dry-aged celeriac | jerusalem artichoke koji | young walnut aioli | spruce | nettle seed crumble.
