    A fun bit of trivia: during Medieval Europe, pie crusts or ‘coffyns’ were not meant to be edible, as their main purpose was to provide a sturdy container for whatever’s cooked inside. Flaky pie crusts with some kind of fat, e.g. butter, didn’t come into existence until the 16th century.

    These are neither baos nor dumplings! These are khinkali, a Georgian [country, not a US state] national dish made with a very thick dough, minced pork & beef (or lamb) and a variety of spices, finished with pepper.

    The presentation is kinda weird, however, I’ve seen it already in some restaurants. The large khinkal is “a mother khinkal” and the smaller are “babies” 🙂

    That’s what I’m missing from regular bao… 30-40 extra mouthfuls of thick dough. I usually just have to eat a loaf of bread with my bao. Great idea!
