Stir Fry Chicken with Ginger Sauce and Rolled Omelette

    For this week, went with a mini Chinese/Japanese fusion of chicken stir fry in Japanese style ginger sauce. Every time I try to use ginger sauce I always feel it would taste even better with more ginger!!

    – Sliced chicken thigh into strips or whatever shape. Then marinated/velveted in soy sauce, cooking wine, corn starch, water, and a bit of baking soda
    – Cut Onions and carrots to strips. Some of the carrots were diced
    – Diced Scallion, and minced garlic and ginger
    – Created stir fry sauce of minced ginger, garlic, soy sauce, a bit of dark soy sauce, mirin, sake, and sugar
    – Whisked eggs with diced carrots and scallions, mixed in some mirin and salt
    – Eggs were done rolled omelette style
    – Cooked the marinated chicken first for 6mins ish in two batches to brown and removed
    – Stir fried the onions and carrots near doneness you want, add chicken back in with the sauce and mix. Put it on high heat at the end for 1-2 mins. Turn off heat and mix in a bit of sesame oil and diced scallions
