Creamy, cozy, and full of flavor—Nonna’s Asparagus Risotto is Italian comfort in a bowl. Simple ingredients, classic technique, and always stirred with love. 💚

Ingredients:
• Water, 6 cups (for the broth)
• Vegetable bouillon cubes, 2 (bring to a boil and keep hot & ready)
• Olive oil, 3 tablespoons (for risotto)
• Onion, 2 medium, chopped
• Arborio Rice, 1 ½ cups
• Asparagus, 1 ½ pounds, chopped
• White wine, 1 cup
• Parmesan cheese, 1 (8 oz) cup
• Salt & pepper to taste
• Basil (optional)

Instructions:

Make the Vegetable Broth

1. Add 2 vegetable stock cubes to 6 cups of water, bring to a boil.

Get the Rice Cooking:

2. In a large pot over the stove, add oil. Once hot, add onion and stir until soft.

3. Add rice, stir often cooking for 2 minutes.

4. Deglaze: Add wine. When it evaporates, start adding the vegetable broth a bit at a time.

5. When the rice is half cooked, add the asparagus.

6. Continue stirring and add more broth.

7. Two minutes before done, add the tips of the asparagus (cook until tender).

8. Remove from heat, add parmesan.

9. Mangia!

hello everyone today we’re going to be making rysto with asparagus and I will start with the broth here I have water boiling and I’m going to add two of these cubes they’re vegetable cubes just put them in the water i’m going to cover it okay and here I have the asparagus and I’m going to clean them like and I’ll just go where the tender part is okay and I will discard the rest so you just go with a knife and go where is the this one you throw it and we’ll use this one okay i will continue because I’m going to be chopping them and then I’ll start to assemble the roato okay now that the asparagus are all chopped see nice and small okay and I left I left the tips for the end i’m going to be adding those in the end okay i’m going to add a little bit of oil here olive oil okay [Music] okay now I’m going to add the rice and see once the onions have a a little soft and this is a raio rice so it’s just made for ratoto to make soft i’m going to get the wine ready oh we wait until it operates with the roato though you know you got to stay you know beside the stove to stir and stir almost until it’s ready because you got to keep adding the broth okay now I’m going to add the um asp so we’ll wait until the vegetables here are cooked add more broth i’m going to add some salt and pepper so you taste it first if you need uh more salt you put more salt it’s up to you i’m just going to put a little bit cuz I don’t want it too salty okay and you just put some black pepper if you like optional and I’m going to add the chips here [Music] this is going to absorb all the u the broth and then we’re going to add the parmesan cheese this looks amazing okay now I’m going to add the Parmesan cheese and I think it’s cooked shut up the stove and there you have it beautiful creamy ratoto we’ll garnish with some basil i hope you enjoyed today’s video until next time ciao for now [Music]
