You gotta wrap that bad boy. Get some parchment paper and wrap it up after it hits 160°.

I’ve done butts at 225 that went over 17 hours. Just fyi. It’ll get there, but it can take a LOT longer than you expect. I also switched to to 275ish because I never felt like the 225 really made a difference.
