My wife went to Costco to pick up ribs for the Holiday. I asked her to get St Louis Style ribs, but she accidentally got the wrong cut. These are “St Louis Style Spare Portions.” So, they’re the meat that’s cut away when making St Louis Style from spare ribs. Each cut is only about an inch wide. I’m thinking I’ll just smoke them exactly how I was planning, but I’m wondering if I’m going to run into issues. It’s short little chunks of bone and meat. Any suggestions or anyone have experience with this?

Smoke em up just not for too long. I used to just brush on some Worcestershire, SPG, some chili flakes, and throw them on the grill for an hour or so. Then baste with bbq sauce to finish. Very good even though it’s not much meat!

Marinate them and smoke em. Pork niblets are so tasty. They dont take long to cook thats why I say marinate. Use an acid or a tenderizer in the marinade to help them be extra soft. You can also cut the meat away and use the bones for a stock and make a mean chili
They look like Korean style ribs. We have a smoker but we use a charcoal grill for them, very good. Marinade overnight if possible.
I smoked 10lbs of those last weekend only cost 38$, came out great. Just spritz or mop often so they don’t dry out
I think you just grill those. They’re delicious with some charro beans, guac, salsa and tortillas. Not what you were thinking for sure but you’ll have a good lunch anyway. 😀

These are not the correct cut nor animal to make galbi. Smoke them and they will be tasty.
1 cup soy sauce
1 cup water
2 tablespoons brown sugar
1 bunch green onion
4 garlic cloves, minced
2 teaspoons grated ginger
1 Teaspoon toasted sesame oil
Grill on high heat about 3 minutes per side
A wonderful mistake
It’s hard to tell from the pic but those look like sweet and sour cut ribs. I know it’s not bbq but when these are cooked/braised Chinese style with black vinegar, ginger and brown sugar, they’re literal crack.

We used to call these “riblets” they are incredible when treated like burnt ends. You can also smoke, cut, and then fry like a wing. They are fatty and can be a little chewy but I like those things.

We call these tablitas. Put some salt, pepper, lemon and orange juice. Then grill. But this is grill vs bbq
We call those Mexican short ribs and they are some of my favorite.
They also make amazing soups (I know, wrong sub). Look up sinigang and lotus root and pork rib soup.
No such a thing as, “wrong ribs.” They all have attributes that are wonderful.
