One medium onion finely chopped. Leak 1/4 cup. Carrot 1/4 cup. Celery 1/4 cup. Tomato paste 2 to 3 tablespoons. Chicken or vegetable stock 500 ml. Blonde rue 50 to 75 gram. Salt and white pepper 1/2 teaspoon. Fresh basil leaves 3 to four. Bread slices 3 to four for croutons. Fresh cream 50 to 100 ml. In a heavy bottomed pan, heat 50 g of oil or butter. Once hot, add the finely chopped onion, leak, carrot, and celery. Saute for 5 to 6 minutes until everything turns slightly golden and soft. Now add the chopped tomatoes and mix well. Also add 2 to 3 tablesp of tomato paste. Cook this mixture on medium heat for about 10 minutes until the tomatoes are soft and tender. Add 500 ml of chicken or vegetable stock and stir well. Cover and let the soup simmer on low heat for 15 to 20 minutes. Once the vegetables are fully cooked, turn off the heat and let the mixture cool slightly. Then blend it using a hand blender or regular blender until the soup becomes completely smooth. Pour the blended soup back into the pan and reheat it. Slowly mix in 50 to 75 g of blonde r. This will give the soup a rich creamy texture. Adjust the taste with salt and white pepper. Finally, chop three to four fresh basil leaves and add them to the soup. Let it simmer for a few more minutes to let the flavors blend well. If you want your soup extra creamy, add 50 to 100 ml of fresh cream at this stage and mix gently. Cut the bread slices into small cubes. Toss them in a bit of butter or olive oil and toast them in the oven or a frying pan until golden brown and crispy. These croutons will be used to garnish the soup. Serve the hot soup in a bowl. Top it with crispy croutons and a swirl of fresh cream. Finally, garnish with one or two fresh basil leaves.
