cooking ragù for a long time in a pan is not really efficient since your water will evaporate a lot. You can make a quick ragù in a pan (not as good as regular ragù but that’s an option) or you can use a pot and let it cook for hours.

Check out Dario Bressanini on instagram, he has the way to make ragù according to the recipe deposited to the chamber of commerce of Bologna in his saved stories. He is a chemist with great understanding of cooking chemistry. I assure you his ragù is very good and actually easy to make, but it takes 3-5 hours.
As an edit, there exist many versions of ragù from around Italy. To me it is fun to try them all and compare. Taste then is only subjective.
