
Had these large wrinkles I’ve never seen before and I forgot to take pictures but when they were finished I cut them apart and the bones were all super curved! They kind of looked like they wanted to spiral. I kept telling my lady “man this was probably some strange looking cancer pig” and now I kind of freaked myself out 😂

There’s nothing wrong here, not every piece of meet looks exactly the same. But it all looks the same after you eat it
Looks like ribs
That’s just how pork spare ribs are. It includes the cartilage at the sternum. If you cut out the meat with the cartilage parts and the flap meat at the end, you then have st. Louis cut ribs.

Spare ribs with the rib tips attached. You cut off the rib tips from the St. Louis ribs. The rib tips are the best part when dry rubbed and smoked.

Each slab of ribs is only half the cut, cut perpendicular to the bones. Each of these looks different and has different meat to bone ratio. In Camada, we get both these cuts everywhere, but in the USA I think there may be some regional preference in some places for the cut nearer the back, and others the cut nearer the belly. I believe what you have there is the half nearer the back, which are meatier. Some butchers will trim off part of that area which doesn’t contain bone (but has some cartilages). Some call it rib tips. I like it attached as it is great meat. Some people cut it off and barbecue it apart from the bonier portion of the ribs.
