No Bake Torta Della Nonna — a fresh, no-oven Italian dessert! Ingredients for pastry cream:
500 ml whole milk, zest of ½ lemon, 7 egg yolks, 120 g sugar, 50 g flour. For the crust:
300 g plain biscuits crushed, mixed with 150 g melted butter. Blend together. Press 3/4 of crust mix into a 22 cm springform pan, . chill 30 mins. Then mix a handful of pine nuts with remaining crust mix. Pour cooled pastry cream on crust. Top with remaining crust and pine nuts. Sprinkle more pine nuts, and refrigerate 4+ hours.
