Let’s make some stuffed tomatoes. You know, it ain’t often that I get a loss for words. But today, today, I’m tired and well, the words just ain’t coming. For several months now, I’ve been go, go, go, go, go and forgot how to say no, no, no, no, no. And well, it’s finally caught up with me. I haven’t been able to focus on anything, and I’ve been jumping around from project to project. I started off by trying to clean the refrigerator today, and before I knew it, I had the pantry emptied out. And guess what never got finished? The refrigerator. And guess what’s all over my house? All the stuff that was in the pantry. And guess who’s too tired to care? Me. But that’s all right, darling. We got to have these yucky days, these blob days. So all the good days actually feel like good days. The thing is though, we don’t want to stay in these sour puss days. So, for the next 30 days, I’m going to do my best to eat clean, get more sleep at night, and say no when I need to say no. And I’m hoping that I’ll get my energy right

  1. Stuffed Tomatoes Recipe
    Ingredients:
    – 8 large tomatoes
    – 1 lb ground beef or sausage
    – 1 small sweet onion, diced
    – 1 large bell pepper or 2 small sweet peppers, diced
    – 1 jalapeño, diced (optional, for heat)
    – 1 egg
    – Salt and pepper, to taste
    – 1 tablespoon Italian seasoning
    – 1 tablespoon garlic powder (or 2 cloves of minced garlic)
    – 1 teaspoon oregano
    – Butter, for sautéing
    – 2 cups of your favorite cheese blend (optional)

    Directions:
    1. Preheat your oven to 375°F (190°C).
    2. Slice about half an inch off the top of each tomato and carefully scoop out the insides with a spoon, placing the pulp and juice into a bowl. Set the hollowed-out tomatoes upright in a baking dish.
    3. Once all the tomatoes are emptied, add the juice from the insides back into the baking dish around the tomatoes, but not inside the tomatoes themselves.
    4. In a skillet, melt a small amount of butter over medium heat. Add the diced onion and bell pepper (and jalapeño, if using) into the skillet. Sauté for about 4-5 minutes, until they become fragrant and just start to soften but are not yet translucent. Remove from heat and allow them to cool slightly.
    5. Combine the sautéed vegetables with the tomato pulp in the bowl. Add in the ground beef (or sausage), egg, salt, pepper, Italian seasoning, garlic powder, and oregano. Mix everything together until well combined. If desired, stir in the cheese at this point.
    6. Fill each hollowed tomato with the stuffing mixture, pressing down gently to pack it in. Top with additional cheese if desired.
    7. Cover with foil and bake in the preheated oven for about 35 minutes, or until the meat is cooked through and the tomatoes are tender.

  4. Mrs. April, when I discovered the power of "No," my life changed. I found God and myself and realized its OK to tell people no. And if they got mad or cut me off? They were never for me. You should be able to say no and no one get upset with you for protecting your peace. My life is less cluttered with other people's drama and more filled with God's peace. ❤❤❤❤
