This Mexican Street Corn Salad is simple with a ton of flavor.

Plus it comes together within minutes.

It’s the perfect side dish for any time of year but especially grill season.

Ingredients:
3 ears of corn, seasoned with avocado oil, salt, pepper, garlic powder
1/2 cup cilantro, finely chopped
1 jalapeño, seeded and finely chopped
1/2 red onion, finely chopped
2 tbsp of butter
2 cloves garlic, pressed
1 lime, juiced
2 tbsp mayonnaise
Cotija cheese

Instructions:
1. Season ears of corn and place on the grill until charred and cooked through.
2. Prep jalapeño, red onion and cilantro.
3. Place a small bowl upside down to shave the grilled corn. Stir in butter until melted.
4. Add jalapeño, red onion, cilantro. Stir to combine.
5. Add garlic, lime juice and mayo. Stir to combine.
6. Add a generous amount of Cotija cheese. Serve and enjoy!
