Ingredients:
* 1 tablespoon crushed garlic
* 15 grams parsley
* zest of ½ lemon
* ¼ juice of the halved lemon
* 1 tablespoon good quality olive oil
Method:
* Add crushed garlic and chopped parsley to a mortar.
* Grate the lemon zest and add to the mortar.
* Squeeze in the lemon juice
* Pound and grind with a pestle until crushed.
* Add olive oil and mix well.
* Add more zest, garlic, or salt if needed. Use immediately for best flavor.
Tips:
* Use within a few hours—gremolata loses its brightness over time.
* You can use it as a finishing touch on grilled meats, roasted vegetables, soups, or even pasta. Think of it as a flavor booster that wakes up a dish.
