Stop eating plain ground beef and make this Lebanese style baked kiba instead. It’s just as good as the original fried ball version, just a little healthier. The only veggie you need to prep is the white onion for the bottom ground beef layer. Then I’m toasting pine nuts in a pan with olive oil until they’re browned and took them out to add in the ground beans and cooking that down before adding in salt, black pepper, cumin, paprika, and the toasted pine nuts. Once that’s all mixed in, we can move on to the hashwa layer. Half of this layer is made up of bular wheat. And you need to soak it in water first for 10 minutes so it expands. Toss it in a food processor with raw ground beef and onion, salt and pepper, Lebanese 7 spice, and paprika. You can do this by hand, just grate the onion instead, but the food processor gets it to the perfect consistency in just a minute. I’m greasing a pie pan, and the cooked beef layer is added first, and then the hasha is layered on top. And this is completely optional, but to make it look better, I scored the top layer. And to make it cute, I’m adding a pine nut in each diamond. Then this is baked at 400 for 40 minutes. While that baked, I made my tabul. And the secret to perfect tabul is to make sure the parsley is finely minced. Now, while the tibula is optional, the lemon garlic yogurt is not. And try not to use Greek yogurt for this. You can eat this meal as is or add some vermicelli rice to it like I did the next day. Either way, it’s so delicious. You’ve got to try making this.

  2. the kibbeh balls are also baked, not fried. and i prefer the tray bake kibbeh, which is what i grew up eating. they are both traditional styles. also that is not hashweh, hashweh must be beef mixed with rice.

  3. I'm a Lebanese married to a Puerto Rican and while I usually watch your content to make my latin cooking better, this video made my day.
