Mediterranean Baked Dorado Recipe

Ingredients (serves 2):
• 1 dorado fish (350–400 g / 12–14 oz), cleaned
• 2 medium onions (1 purple, 1 yellow), sliced into thick rings
• 2 tbsp olive oil
• 150 g (1 cup) green olives
• 200 g (1 ½ cups) cherry tomatoes, halved
• Lemon slices
• Salt and pepper, to taste
• Fresh thyme sprigs

Instructions:
1) Preheat oven to 210°C (410°F).
2) Make shallow cuts on both sides of the fish.
3) Drizzle 1 tbsp olive oil in a deep ovenproof skillet. Layer onion rings, cherry tomatoes, and olives.
4) Place the fish on top, stuff the cavity with lemon slices, and add thyme sprigs. Season with salt, pepper, and the remaining 1 tbsp olive oil.
5) Bake for 15 minutes or until the fish is cooked through.
