Does anybody know why the onion I added (took up more room than the others veggies) basically disappeared?

I had never thought of adding rice. I’m making a chuck roast tomorrow and now I’m thinking of a way to add rice. I was gonna make it today but it was still frozen solid this morning at 9am, and I need at least 6hrs in the slow cooker, so tomorrow it is.

Looks great, mouths watering. Tip – cut up the veg into smaller bits, add some gravy. What spices you use? I find sweet paprika, thyme and parsley are good additions.
