Hey y’all. Welcome back to Miji and Poppy’s Kitchen. How would you like a recipe that is quick, easy, loaded with protein, healthy, and can easily be gluten-free adaptable? That sounds good to me. And I think I have found it. It looks like a fantastic recipe. Let’s make it. See if it’s as good as it looks. Okay, I think the hardest part about this recipe is going to be boiling the rice. I’m not kidding. This is so easy. It says it’s got 46 gram of protein in each serving, but we’re going to take a shortcut, or I’m going to take a shortcut. I’m going to link the recipe to the bottom. So, if you don’t take the shortcut, you’re probably going to have the 46 grams of protein. For me, um I’m going to use a ranch dressing that’s already made, but the recipe calls for a homemade ranch dressing that you make with yogurt, so I’m sure that adds to the protein count. So, what we’re going to do first, because this will be the part that takes the longest, is I’ve got my water boiling to um to cook the rice. This recipe calls for two chicken breasts and you either cook them all day in a crock pot or you do it in the pressure cooker. But to make this quick and easy, like I said, I had a rotisserie chicken and I thought, well, I’m just going to go ahead. My chicken’s already cooked for me. And um if you don’t know this tip already, because if you do it in crockot, you’re supposed to shred it up and all this. So if you don’t know this already, like if you make chicken salad out of rotisserie chicken or anything where it needs to be shredded, you can just put it in the stand mixer and turn it on and it shreds it for you. It’s like the greatest thing ever. So to the Oh, let me see. to the chicken. In the crock pot, we were supposed to add um let’s see, a half of a cup of hot sauce. And I used Frank’s hot sauce. So, half of a cup of hot sauce. Did I tell y’all this was buffalo chicken rice bowls? If not, it’s buffalo chicken rice bowls. Um, okay. So, a half of a cup of hot sauce, a4 of a cup of melted butter or ghee, and of course, a four of a cup is just four tablespoons. Um, a teaspoon of p paprika and a teaspoon of garlic powder, which I’ve got those mixed together right here. And a half of a teaspoon of salt. Okay, since the rice is going to be the thing that takes the longest, um, I’m going to go ahead and add that. So, I’ve got four cups of rice boiling. I meant four cups of water. And, uh, I’ve added two cups of rice. And then I’m going to add a little bit of salt to it. I’m going to cover it. Um, turn it down to low and simmer for 15 minutes. No kidding. That’s going to take longer than any of the rest of the recipe. Okay, so I’m about to shred this together and I’ll be right back to tell you what we’re going to do after that. Oh, you have no idea. [Music] Okay, that truly was the easiest meal that I think I’ve ever put together. The hardest part was boiling the rice. I’m not kidding. So, have y’all ever had that buffalo ranch chicken buffalo chicken ranch dip? Whatever that’s called. Uh my daughter makes it all the time. It’s so delicious. That’s what this chicken tastes like. So, I haven’t put it all together yet. Poppy’s home. He is uh tired and hungry. So, we are about to eat. Let me tell you the healthy part about this meal is that it says to add cucumbers, tomatoes, onion, carrots, grated carrots. I didn’t have any of that, so I just made us a salad to to go with it. but um gluten-free because nothing has gluten in it except for maybe the ranch dressing, but Newman’s Own is gluten-free, so that’s what I’m using. So, we’re going to do a taste test. We haven’t We’ve never had this before. Just kind of mix it up and hot. Put it on there. went down my shirt. Oh, that’s good.
