Kebab Ingredients:
• Ground beef (medium or lean): 500 g
• Onion: 1 small (about 100 g)
• Garlic cloves: 2, minced
• Smoked paprika: 1 tsp
• chilli flakes: ½ tsp
• Ground coriander seeds: ½ tsp
• Cumin powder: ½ tsp
• Black pepper: ½ tsp
• Salt: 1 tsp

Onion Salad:
• Red onion: 1 small (thinly sliced)
• Sumac: ⅓ tsp
• Salt: a pinch
• Fresh dill: 1 tsp, chopped
• Lemon juice: from ½ lemon
Mix all in a bowl and let sit for a few minutes to marinate.

White Sauce:
• Mayonnaise: ¼ cup (about 4 tbsp)
• Yoghurt: 2 tbsp
• Fresh mint (chopped or dried): ⅛ tsp
• Garlic clove: ½ small clove, minced or grated
• Lemon juice: 1 tbsp
• Salt: ⅛ tsp
• Sumac
Mix all ingredients in a small bowl. Chill until ready to serve.

Method for Kebab
1️⃣ In a bowl, combine grated onion (squeeze excess water), minced garlic, and all spices with ground beef.
2️⃣ Mix very well until the mixture becomes sticky and holds together.
3️⃣ Chill the mixture so the flavours can fully develop — ideally for a few hours to overnight, or at least 30 minutes. Then, shape it into long kebab forms on skewers (or into sausage-like shapes if not using skewers). After shaping, set the kebabs on a large tray and refrigerate again for another 20–30 minutes to help them firm up before cooking.
4️⃣ Grill or pan-fry over medium-high heat, turning until evenly browned and cooked through (about 10–12 minutes).
